One of our favorite juices combines carrots, ginger, and cucumbers. If you have any of these in your own vegetable garden, not only can they be turned into delicious and healthy homemade juices but can be incorporated into delightfully creative cocktails!
When combined with a bit of gin, Italian aperitivo, and fresh lime juice, our homemade carrot-ginger juice is transformed into a vibrant summertime gimlet that’s a perfect match for your next garden party or back porch happy hour.

Ingredients
For the Carrot-Ginger Juice
- 3 carrots, chopped
- 1 small cucumber, chopped
- 1 celery stalk, chopped
- 1 orange, peeled and chopped
- 1 apple, peeled, cored, and chopped
- 1 2-inch piece fresh ginger, peeled and chopped
For the Carrot Gimlet
- 1 1/2 oz. homemade carrot-ginger juice
- 1 1/2 oz. gin
- 1/2 oz. Cocchi Americano
- 1 oz. fresh lime juice, plus lime wheels, for garnish
Directions
- Step 1Make the Carrot-Ginger Juice: Combine carrots, cucumber, celery, apple, and ginger in a blender and blend until smooth. Strain through a fine-mesh strainer.
- Step 2Make the Carrot Gimlet: Combine carrot-ginger juice, gin, Cocchi Americano, lime juice, and ice in a cocktail shaker. Shake until well chilled, 10 to 15 seconds. Strain into a chilled coupe, garnish with a lime wheel.
