Cheddar-Tomato Hand Pies

Juicy summer tomatoes, sharp Cheddar, and flaky pastry come together in these portable hand pies that are perfect for lunch, picnics, or snacking.

Few pairings are as quintessentially summer as ripe tomatoes and sharp Cheddar, and these flaky hand pies make the most of both. Wrapped in buttery pastry and baked until golden, they're packed with melty cheese and juicy tomatoes for a savory bite that's just as welcome at a picnic as it is alongside a simple green salad. Make them while tomatoes are at their peak for the very best flavor.

Ingredients

  • 1 (12-ounce) container cherry tomatoes
  • 1 Tbsp. olive oil
  • Kosher salt and freshly ground black pepper
  • 3 slices cooked bacon, crumbled
  • 2 small cloves garlic, pressed
  • 1 Tbsp. chopped fresh oregano
  • 4 oz. sharp Cheddar, grated (about 1 cup)
  • 1/4 cup sour cream
  • 1 (17.3-ounce) package frozen puff pastry sheets, thawed
  • All-purpose flour, for work surface
  • 1 large egg, beaten

Directions

    1. Step 1Preheat oven to 325°F. Combine tomatoes and oil in a 2-quart baking dish. Season with salt and pepper. Bake until tomatoes are blistered and start to release their juices, 55 minutes to 1 hour. Cool completely.
    2. Step 2Stir together tomatoes, bacon, garlic, oregano, Cheddar, and sour cream in a bowl, pressing tomatoes against sides of bowl to burst them. Season with salt and pepper.
    3. Step 3Increase oven to 400°F. Line a rimmed baking sheet with parchment paper. Unroll puff pastry on lightly floured work surface; cut each in half. Place filling on bottom center of each rectangle, dividing evenly, leaving 1-inch border all around. Brush border with egg and fold dough over filling. Press edges with fork to seal. Transfer to prepared baking sheet. Lightly prick tops with a fork. Brush tops and sides with egg. Bake until golden, 18 to 20 minutes. Cool 5 minutes.
