Cool, crisp, and quietly refreshing, this cucumber-gin Collins is made for easy sipping. Bright lemon and a touch of sweetness balance the botanicals.

Ingredients

  • 3 cucumber slices, plus more for garnish
  • 3/4 oz. simple syrup
  • 1 1/2 oz. gin
  • 3/4 oz. lemon juice
  • Club soda

Directions

    1. Step 1Muddle 3 cucumber slices and simple syrup in a cocktail shaker until cucumber slices are broken up. Add gin, lemon juice, and ice; cover, and shake until chilled, 15 to 20 seconds.
    2. Step 2Strain into a Collins glass filled with ice. Top with club soda and garnish with cucumber slices.
