Ingredients

  • Cooking spray
  • 4 lb. yellow squash, chopped
  • 2 medium yellow onions, finely chopped (about 1 1/2 cups)
  • 4 Tbsp. chopped green bell pepper
  • 1/2 lb. Cheddar cheese, shredded
  • 1/2 lb. pepper Jack cheese, shredded
  • 8 oz. diced pimientos
  • 4 large eggs, beaten
  • 2/3 cup mayonnaise
  • 2 Tbsp. dry vermouth
  • 2 tsp. Worcestershire sauce
  • 2 tsp. dried basil
  • 2 tsp. granulated onion
  • 2 tsp. granulated garlic
  • 2 dash Hot sauce
  • 1/4 tsp. sugar
  • kosher salt and freshly ground pepper
  • 3 cups panko breadcrumbs

Directions

    1. Step 1Preheat oven to 350°F. Meanwhile, coat two 9- by 13-inch casserole dishes with cooking spray and set aside.
    2. Step 2In a large stockpot over medium heat, combine the squash, yellow onions, and bell pepper. Cover vegetables with water, bring to a boil, and cook until squash is just soft, 10 minutes. Drain, discarding the liquid, and return vegetables to the pot. Add the next 12 ingredients (Cheddar through sugar). Season with salt and freshly ground pepper, to taste. Stir to mix well.
    3. Step 3Scoop mixture into the prepared casserole dishes, and sprinkle with breadcrumbs. Bake until golden brown, 30 to 45 minutes.
