Ingredients
- 5 Tbsp. olive oil, divided
- 2 cloves garlic, very thinly sliced
- 1 tsp. fresh thyme leaves
- 2 cups ricotta cheese
- 1/4 cup whole milk
- Flaked salt
- Freshly ground coarse black pepper
- 8 thick slices sourdough bread
Directions
- Step 1Heat 3 tablespoons oil in a small skillet over low heat. Add garlic and thyme. Cook, until golden brown, 4 to 6 minutes; cool.
- Step 2Meanwhile, beat ricotta and milk on medium speed with an electric mixer until light and fluffy, 2 to 3 minutes. Season with salt and pepper. Transfer to a bowl and top with garlic-thyme oil.
- Step 3Heat grill to medium-high. Brush bread with remaining 2 tablespoons oil, dividing evenly. Grill, turning once, until toasted and lightly charred, 2 to 4 minutes. Serve alongside ricotta mix.
