With only 30 minutes of prep, this dreamy banana confection is as easy as it is delicious. Note that the total time includes cooling.

Ingredients

  • Nonstick baking spray, for the pan
  • 1 3/4 cups all-purpose flour, spooned and leveled 
  • 1 (3.4-ounce) box instant butterscotch pudding mix
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 cup (1 stick) unsalted butter
  • 2 large, ripe bananas, peeled and halved lengthwise
  • 1 cup packed dark-brown sugar
  • 3 large eggs, lightly beaten
  • 1 tsp. pure vanilla extract
  • 1 tsp. kosher salt
  • Dulce de leche, toasted coconut, and flaked sea salt, for serving

Directions

    1. Step 1Preheat oven to 350°F with rack in the middle position. Coat a 10- to 12-cup Bundt pan with baking spray. Whisk together flour, pudding mix, baking powder, and baking soda in a bowl. 
    2. Step 2Melt butter in a large skillet. Add bananas and cook, stirring occasionally, until golden brown, 4 to 5 minutes. Sprinkle with sugar and cook until bananas break down. Transfer to a bowl; mash until smooth.
    3. Step 3Whisk eggs, vanilla, and kosher salt into bananas. Add to flour mixture and stir until incorporated. Transfer to prepared pan; gently tap to release air bubbles.
    4. Step 4Bake until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in pan on a wire rack for 15 minutes, then invert onto a wire rack to cool. Drizzle with dulce de leche and sprinkle with coconut and flaked sea salt.
