Chocolate Tres Leches Cake

Ingredients

  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1/2 cup unsweetened cocoa powder
  • 3/4 tsp. baking soda
  • 3/4 tsp. kosher salt
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. baking powder
  • 1 large egg
  • 1 cup packed brown sugar
  • 1 tsp. pure vanilla extract
  • 3/4 cup mayonnaise
  • 3/4 cup warm coffee
  • 1 (5-ounce) can evaporated milk
  • 3/4 cup sweetened condensed milk
  • 1 1/2 cups heavy cream, divided
  • 3 Tbsp. confectioners’ sugar
  • Chocolate curls, for garnish

Directions

    1. Step 1Preheat oven to 350°F. Lightly grease a 9-inch-square baking pan. Whisk together flour, cocoa powder, baking soda, salt, cinnamon, and baking powder in a bowl. 
    2. Step 2Beat egg, brown sugar, and vanilla with an electric mixer on medium speed until light in color, 1 to 2 minutes. Beat in mayonnaise just until combined. Beat in flour mixture alternately with coffee, beginning and ending with flour mixture, just until combined. Transfer batter to prepared pan. 
    3. Step 3Bake until a wooden pick inserted into center comes out clean, 24 to 26 minutes. Cool on a wire rack 10 minutes. 
    4. Step 4Whisk together evaporated milk, sweetened condensed milk, and 1/2 cup cream. Pierce top of cake several times with a wooden skewer. Slowly pour milk mixture over cake (about 1/3 cup at a time), allowing mixture to soak into cake. Cool completely. 
    5. Step 5Beat remaining 1 cup cream on high speed, 1 minute. Gradually add confectioners’ sugar and beat just until soft peaks form, about 1 minute. Spread evenly over cake and garnish with chocolate curls.
