Ingredients
- 1 1/2 cups all-purpose flour, spooned and leveled
- 1/2 cup unsweetened cocoa powder
- 3/4 tsp. baking soda
- 3/4 tsp. kosher salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. baking powder
- 1 large egg
- 1 cup packed brown sugar
- 1 tsp. pure vanilla extract
- 3/4 cup mayonnaise
- 3/4 cup warm coffee
- 1 (5-ounce) can evaporated milk
- 3/4 cup sweetened condensed milk
- 1 1/2 cups heavy cream, divided
- 3 Tbsp. confectioners’ sugar
- Chocolate curls, for garnish
Directions
- Step 1Preheat oven to 350°F. Lightly grease a 9-inch-square baking pan. Whisk together flour, cocoa powder, baking soda, salt, cinnamon, and baking powder in a bowl.
- Step 2Beat egg, brown sugar, and vanilla with an electric mixer on medium speed until light in color, 1 to 2 minutes. Beat in mayonnaise just until combined. Beat in flour mixture alternately with coffee, beginning and ending with flour mixture, just until combined. Transfer batter to prepared pan.
- Step 3Bake until a wooden pick inserted into center comes out clean, 24 to 26 minutes. Cool on a wire rack 10 minutes.
- Step 4Whisk together evaporated milk, sweetened condensed milk, and 1/2 cup cream. Pierce top of cake several times with a wooden skewer. Slowly pour milk mixture over cake (about 1/3 cup at a time), allowing mixture to soak into cake. Cool completely.
- Step 5Beat remaining 1 cup cream on high speed, 1 minute. Gradually add confectioners’ sugar and beat just until soft peaks form, about 1 minute. Spread evenly over cake and garnish with chocolate curls.
