Easy Shrimp Scampi Pasta

Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • Kosher salt and freshly ground black pepper
  • 1 lb. fettuccini
  • 1/2 stick (4 Tablespoons) unsalted butter, at room temperature, divided
  • 7 cloves garlic, minced
  • 1/2 cup dry white wine, such as Sauvignon Blanc
  • 1 tsp. finely grated lemon zest, plus 1/2 cup lemon juice (from about 2 lemons)
  • 1/2 to 1 teaspoon crushed red pepper
  • Chopped fresh flat-leaf parsley, for garnish

Directions

    1. Step 1Pat shrimp dry, then season with salt.
    2. Step 2Cook pasta until just al dente, typically 1 to 2 minutes shorter than package directions. Reserve 1/2 cup pasta water, then drain.
    3. Step 3Meanwhile, melt 2 tablespoons butter in a large skillet over medium heat. Add garlic and cook, stirring occasionally, until fragrant, 1 to 2 minutes. Add shrimp and cook, stirring occasionally, just until cooked through, 3 to 5 minutes.
    4. Step 4Reduce heat to medium-low. Add wine, lemon zest and juice, and red pepper. Simmer, stirring occasionally, until sauce begins to thicken, 1 to 2 minutes.
    5. Step 5Add fettuccini, remaining 2 tablespoons butter, and 1 tablespoon reserved pasta water. Cook, stirring, until sauce thickens and begins to coat pasta (add 1 tablespoon of additional pasta water at a time, if needed, to help create sauce). Serve garnished with parsley and black pepper.
