Classic Buffalo Chicken Dip

This ridiculously tasty dip takes just 20 minutes to make.

Is it even game day without a big bowl of Buffalo chicken dip, surrounded by chips and veggies for dipping? We don't think so. This easy dip is a cinch to make: You just whip up some classic Buffalo sauce, stir in your chicken and cheeses, and bake until bubbly! It's excellent as part of a Super Bowl snack spread, or simply as a DIY dip for enjoying on any game night. We highly recommend Franks Red Hot sauce — it's traditional — but if you're feeling adventurous, feel free to sub in your own favorite hot sauce and see what happens! It could be incredible.

How long can you leave Buffalo chicken dip on warm?

If you want to keep your dip warm during the entire game, consider making (or putting) it in a small Crock Pot or slow cooker. It should stay fine there while you're watching the game, but the USDA does recommend not leaving food between 40°F and 140°F (what they call "the danger zone") for more than two hours, to prevent spoilage.

How long is Buffalo chicken dip good for?

Once made, the dip should last in your fridge for about a week. Or you can freeze it!

Can you freeze Buffalo chicken dip?

Yep, you can freeze it! Put it in a freezer-safe container and wrap or cover tightly, trying to remove all contact with air if possible, and you can keep it frozen for up to three months! Simple reheat and eat when you're ready!

Why is it called Buffalo chicken dip?

You might think it has some relation to the big, shaggy, cow-like animals, but it doesn't. Both Buffalo Dip and Buffalo Wings are so-named for the city where the classic buttery hot sauce was invented: Buffalo, New York. (Go, Bills!)

What's good to dip in Buffalo chicken dip?

The classic choices are celery sticks, carrots, and potato chips (sturdy chips like kettle chips work best). But honestly, the sky is the limit! Any cut vegetable will work, or you could try putting the spread on crackers. Or you could get a little recursive and try dipping some cheese-stuffed Buffalo meatballs in there for a double-Buffalo snack experience.

Ingredients

  • 2 Tbsp. unsalted butter
  • 2 cups loosely packed shredded chicken
  • 1/2 cup Buffalo style hot sauce (such as Frank's Red Hot)
  • 1 (8 oz.) package cream cheese
  • 4 oz. sharp Cheddar cheese, shredded (about 1 cup)
  • 1 oz. blue cheese, crumbled (about 1/4 cup), divided
  • Chives to garnish
  • Crudités such as carrots, bell peppers, celery sticks, or kettle chips for dipping

Directions

    1. Step 1Preheat oven to 350°F. Melt butter in a medium sauté pan over medium-low heat. Add chicken and hot sauce. Cook, stirring, until warm. Add cream cheese, cheddar, and half the blue cheese, and stir until combined. Transfer to an oven-safe 2 cup baking dish.
    2. Step 2Bake until bubbling, 24 to 26 minutes. Serve garnished with chives and remaining blue cheese and crudités alongside.
