Winter Greens & Citrus Salad

Rosemary-Parmesan croutons give this simple salad serious flavor and crunch.

Ingredients

For Croutons:

  • 4 cups cubed sourdough bread
  • 3 Tbsp. olive oil
  • 2 tsp. fresh rosemary, minced
  • Kosher salt and freshly ground black pepper
  • 1 1/2 oz. Parmesan cheese, grated (about 1/2 cup)

For Dressing:

  • 1/4 cup fresh orange juice
  • 1/4 cup olive oil
  • 1 Tbsp. Dijon
  • 1 Tbsp. Champagne vinegar
  • 1 Tbsp. pure maple syrup

For Salad:

  • 12 oz. assorted hardy greens (such as kale, collards, and chard), stems removed and sliced into ribbons
  • 1/2 cup toasted pine nuts
  • 2 small shallots, thinly sliced
  • 4 Cara Cara oranges, peeled and pith removed, and segmented

Directions

    1. Step 1Make croutons: Preheat oven to 350°F. Toss together bread, oil, and rosemary on a large rimmed baking sheet. Season with salt and pepper. Sprinkle with cheese. Bake, stirring halfway through, until golden brown, 14 to 16 minutes. Cool completely. 
    2. Step 2Make dressing: Whisk together orange juice, oil, mustard, vinegar, and maple syrup in a bowl. Season with salt and pepper. 
    3. Step 3Make salad: Add greens to dressing and use hands to massage greens until starting to soften. Add nuts, shallots, oranges, and croutons, and toss to combine.
