Winter Citrus Salad with Shallot Vinaigrette

"In the cool months we gravitate toward this winter salad," says Julie Cloutier of Cloutier Ceramics.

Ingredients

  • 1/2 medium red onion, thinly sliced
  • 1/2 cup olive oil
  • 2 Tbsp. canola oil
  • 1/4 cup red wine vinegar
  • 1/2 medium shallot, minced
  • 1 tsp. pure honey
  • 1 tsp. Dijon mustard
  • Kosher salt and freshly ground black pepper
  • 1 large head radicchio, roughly chopped
  • 1 head frisée, torn
  • 1 small grapefruit, segmented
  • 2 medium oranges, Cara Cara or navel, segmented
  • 1 medium blood orange, segmented
  • 3 oz. feta, crumbled (about 3/4 cup)

Directions

    1. Step 1Place onion in a bowl and cover with ice water. Let sit until mellowed, 15 to 20 minutes. Meanwhile, combine olive oil and canola oil in a measuring cup. Whisk together vinegar, shallot, honey, and Dijon in a bowl. While whisking slowly add oil, drop by drop at first, until fully incorporated. Season with salt and pepper. 
    2. Step 2Drain and pat onions dry. Combine radicchio, frisée, citrus, and onions in a bowl. Drizzle with 1/2 cup dressing and toss to combine. Transfer to a serving bowl, taking care to evenly distribute the citrus and onion on top. Sprinkle with feta and season with pepper. Serve with remaining dressing alongside.
