A salad is only as good as the vegetables you're using. If you're bringing greens to the next potluck or dinner party, stop by your local farm stand or farmers' market to get supplies. You're much more likely to find things that have been picked recently, and haven't spent a lot of time in storage or transit.

Ingredients

  • 3 Tbsp. olive oil
  • 4 Tbsp. fresh lemon juice
  • Kosher salt and freshly ground black pepper
  • 4 oz. lettuce mix
  • 12 cherry tomatoes, halved
  • 3 oz. Feta, crumbled (about 2/3 cup)
  • 2 Persian cucumbers, sliced
  • 1/2 cup Castelvetrano olives, torn

Directions

    1. Step 1Whisk together oil and lemon juice in a bowl. Season with salt and pepper. Add lettuce, tomatoes, Feta, cucumbers, and olives; toss to combine. Season with salt and pepper. Adjust dressing as needed.
