This recipe comes straight from the Florida Keys!

Though the idea behind key lime pie — a custard made with condensed milk and the eponymous fruit — is relatively simple, there may be as many variations as there are bakers making it. We're fans of this version, which comes from Doug Shook, the longtime chef at the Key West institution Louie's Backyard. While keeping the filling as classic as it comes, he swaps out the graham cracker crust for a much tastier one based on ginger snaps. It's easy to make and fits the flavors of the pie much better!

You can serve it plain, as we have, or do as they do at Louie's and top it with whipped cream and fresh berries. Either way, you can't go wrong!

Ingredients

For Pie Crust:

  • 1/3 cup sugar
  • 1/4 cup (1 stick) unsalted butter, at room temperature
  • Kosher salt
  • 1 1/2 cups plus 2 tablespoons all-purpose flour
  • 1 extra-large egg
  • 1/2 tsp. vanilla extract
  • 2 Tbsp. molasses
  • 1/2 Tbsp. ground ginger
  • 1/4 tsp. ground cinnamon

For Filling:

  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup key lime juice
  • 4 extra-large egg yolks
  • 1 tsp. vanilla extract

Directions

    1. Step 1Make crust: Preheat oven to 325°F. In a medium bowl, cream sugar, butter, and salt until smooth. Add flour, egg, vanilla, molasses, ginger, and cinnamon and mix well to form a smooth dough. Roll out dough on a lightly floured surface into a circle about 13 inches wide and 1/4 inch thick. Line a tart pan with a removable bottom with dough. Trim excess dough. Bake crust until browned, 12 to 15 minutes. 
    2. Step 2Make filling: In a medium bowl, whisk together all ingredients. Pour into pie shell and bake until filling sets to consistency of a soft custard, about 15 minutes. Cool pie completely on a wire rack.
