Tater Tot Casserole

This kid-friendly concoction is a pleaser for adults, too!

Known around the Upper Midwest as "hot dish," this pure comfort-food classic is one of our favorite ways to get picky eaters to stop, well, picking, and clean their plates. It's made from pantry staples and packed with good-for-you veggies. It can be made in about an hour, but can also be assembled ahead and simply pulled out and baked. And like all comfort foods, it's so good, you may have to double the recipe if you want leftovers!

Ingredients

  • 2 Tbsp. olive oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, chopped
  • Kosher salt and freshly ground black pepper
  • 1 lb. ground beef
  • 1 (10/5-ounce) condensed mushroom soup
  • 1/3 cup ketchup
  • 1 Tbsp. Worcestershire
  • 1 cup frozen cut green beans
  • 3/4 cup frozen peas
  • 1/2 cup frozen corn
  • 4 oz. cheddar cheese, grated (about 1 cup)
  • 1 Parmesan cheese, grated (about 1/4 cup)
  • 3 1/2 cups frozen tater tots

Directions

    1. Step 1Preheat oven to 450ºF. Heat oil in a large skillet over medium heat. Add onion and garlic. Season with salt and pepper. Cook, stirring occasionally, until onion is soft, 3 to 5 minutes. Add beef and cook, breaking it up with a spoon, until no longer pink, 4 to 5 minutes. Add soup, ketchup, and Worcestershire and cook, stirring occasionally, until warmed though, about 1 minute. Add green beans, peas, and corn. Cook, stirring occasionally, until warmed through about 1 minute. Remove from heat and stir in cheddar until melted. 
    2. Step 2Transfer mixture to an 8-by-8-inch baking dish. Cover with tater tots then sprinkle with Parmesan. Bake, on a rimmed baking sheet, until tater tots are crispy, 30 to 35 minutes. Let rest 5 minutes before serving.
