Slow Cooker Beef Tacos
Low-key and easy, this is how taco night should be.

Tacos are a dish that practically make themselves, and we're leaning into that here. Set up the brisket to cook in the slow cooker, and all you need to do is chop a few veggies for toppings and warm up some tortillas. What could be better?

Ingredients
- Cooking spray
- 2 medium onions, chopped
- 3 cloves garlic, chopped
- 2 chipotle in adobo sauce, chopped, plus 3 tablespoons adobo sauce
- 1 (3- to 3 1/2-pound) beef brisket
- 2 Tbsp. Montreal steak seasoning
- 1 tsp. cumin seeds, crushed
- Warm corn tortillas, for serving
- Shredded Cheddar, shredded romaine, guacamole, sliced fresh jalapeños, pickled jalapeños, lime wedges, sour cream, chopped tomatoes, and chopped fresh cilantro, for topping
Directions
- Step 1 Lightly grease a 6-quart slow cooker. Add onions and garlic.
- Step 2Stir together chipotle pepper and adobo sauce in a bowl. Season beef with steak seasoning and cumin, then rub with adobo mixture. Place on top of onions and garlic. Add 1/4 cup water to slow cooker.
- Step 3Cover and cook on low until beef is very tender, 7 to 9 hours. Transfer beef to a cutting board and shred with two forks. Return to slow cooker and stir to combine. Serve with tortillas and desired toppings.
