Ingredients

  • 1 (3 1/4-pound) untrimmed flat-cut beef brisket
  • 1 Tbsp. chili powder or western-style barbecue seasoning (such as Adkins)
  • Kosher salt and freshly ground black pepper
  • 1 yellow onion, sliced
  • Corn or flour tortillas, warmed
  • Grated Cheddar, pickled jalapeños, sliced radishes, sliced avocado, for serving

Directions

    1. Step 1Place brisket, fat side up, in a 9- by 13-inch baking dish. Season with chili powder and salt and pepper. Let rest at room temperature for 1 hour.
    2. Step 2Preheat oven to 300°F. Scatter onion over brisket and add 1/2 cup water to the bottom of the dish; tightly cover with aluminum foil. Bake until an instant-read thermometer inserted in the thickest part reads 200°F, 2 to 2 1/2 hours.
    3. Step 3Transfer beef to a cutting board, loosely tent with foil, and let rest 15 minutes. Thinly slice against the grain. Transfer to a platter and spoon juices over sliced meat. Serve with tortillas and desired toppings.
