Brown Sugar-Bourbon-Pineapple-Glazed Ham

This simple, decadent glaze turns any ham into a prized centerpiece!

Whether you're celebrating Easter, Christmas, or hosting for a graduation or birthday, there's never a wrong time to serve a ham!

It goes with dozens of side dishes, and the sweet, salty flavor is always popular. Plus, there are plenty of ways to use up any leftovers. 

This ham recipe is our absolute favorite. You want to start with a high-quality boneless ham. We recommend Snake River Farms Kurobata Boneless Ham, which you can buy on their site or from Williams-Sonoma. It's a heritage breed, also known as Berkshire, that originated in England and is renowned for its tenderness and flavor. 

We bake it at a low temp until it's just warmed through, and then we glaze it with our most delectable glaze and roast it until the outside is practically candied and crisp. You won't believe just how good this baked ham is.

Ingredients

  • 1 (7- to 8-pound) boneless ham, such as Snake River Farms
  • 3/4 cup bourbon
  • 2 cups packed dark brown sugar
  • 1 Tbsp. dry mustard
  • 3/4 cup pineapple juice
  • 1 (15.25-ounce) can crushed pineapple

Directions

    1. Step 1Preheat oven to 325°F. Place an oven-safe rack in a rimmed baking sheet or roasting pan. Pat ham dry. Use a paring knife to score a 1/4-inch-deep crosshatch pattern; transfer to prepared pan. Bake until the internal temperature on an instant-read thermometer reads 125°F, 2 hours and 15 minutes to 2 hours and 30 minutes (10 to 12 minutes per pound). 
    2. Step 2Meanwhile, combine bourbon, sugar, mustard, and pineapple juice in a medium saucepan. Bring to a boil over medium heat. Reduce heat and simmer until glaze is reduced by half and coats the back of a spoon, between 25 and 45 minutes. 
    3. Step 3Remove ham from oven. Increase oven to 400°F. Brush 1/3 cup of glaze across the top of the ham, being sure to cover the surface and get into the scores. Roast until glaze is caramelized, 20 to 24 minutes. Let rest 15 minutes before slicing. 
    4. Step 4Add crushed pineapple to remaining glaze. Simmer over medium-low heat until sauce is warmed through, 5 to 10 minutes. Serve sliced ham with sauce alongside.
