Fans of the Moscow Mule's clean kick take note: This ginger-spiked cider version is sure to be your new fall favorite!

It's simple to make, and even easy to keep dry (just leave the vodka out). It's cool and refreshing, and perfect for picnics, parties, patios, or post apple-picking pleasantries! Best part: you can easily make it ahead.

Ingredients

  • 1 (1-liter) bottle fresh apple cider
  • 2 (3-inch) pieces ginger, peeled and thinly sliced
  • 8 strips lemon peel
  • 1/2 cup pure honey
  • Vodka, optional
  • Club Soda, chilled
  • Thinly sliced apple and candied ginger, for garnish

Directions

    1. Step 1Bring apple cider, ginger, lemon peel, and honey to a boil in a medium saucepan over medium-high heat. Remove from heat and cool completely; cover and refrigerate overnight. Strain through a wire-mesh strainer. 
    2. Step 2 Divide cider between glasses. Top with ice, vodka, if desired, and splash of club soda. Garnish with sliced apple and candied ginger.
