Maple-Bacon Popovers

Popovers are a classic breakfast dish, first appearing in print in the mid-19th century. They should be served immediately, so wait to bake them until you’re ready to sit down and eat.

Ingredients

  • 1 cup whole milk, at room temperature
  • 3 large eggs, at room temperature
  • 1 tsp. pure vanilla extract
  • 3 Tbsp. dark maple syrup, divided
  • 1 cup all-purpose flour, spooned and leveled
  • 1/2 tsp. kosher salt
  • 3 Tbsp. unsalted butter, melted and cooled slightly
  • 6 slices cooked bacon, chopped
  • Cooking spray

Directions

    1. Step 1Whisk together milk, eggs, vanilla, and 1 tablespoon maple syrup in a bowl. Whisk in flour and salt. Whisk in butter. Fold in bacon. Let batter rest for 15 minutes while preheating oven.
    2. Step 2Place a popover pan in the oven and preheat to 425°F. Once oven has preheated, remove the pan and lightly grease cups. Transfer batter to pan cups, dividing evenly.
    3. Step 3Bake 15 minutes. Without opening the oven door, reduce temperature to 350°F. Bake until golden brown and puffed, 14 to 16 minutes. Lightly brush tops with remaining 2 tablespoons maple syrup. Serve immediately.
