Tuna Salad with Pears and Mint

Ingredients
- 1 (6-ounce) can white albacore tuna, packed in water
- 1 medium crisp, sweet pear
- 3 Tbsp. finely chopped sweet onion
- 1/4 tsp. fresh-ground pepper
- 3 Tbsp. fresh mint, chopped
- 1 lime, juiced
- 3 Tbsp. mayonnaise
- 1 large tomato, sliced
- 1/2 cucumber, sliced
Directions
- Step 1Drain the tuna, place it in a medium bowl, and break apart using a fork.
- Step 2Core the pear, chop into 1/3-inch pieces, and add to the tuna. Add the onion, pepper, mint, and lime and toss to combine. Stir in the mayonnaise until just combined.
- Step 3Arrange the tomatoes and cucumbers on two plates. Divide the tuna salad between the plates and serve.
