This ultimate vegetarian pie shines a spotlight on cauliflower, contrasting its soft, nutty flavor with the crispness of breadcrumbs and our thin crust.

Ingredients

Cauliflower

  • 4 cups cauliflower florets, finely chopped
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 1 recipe Thin Crust Pizza Dough
  • Flour, for dusting countertop
  • Cornmeal, for dusting baking pan
  • 3 Tbsp. breadcrumbs

Directions

    1. Step 1Preheat oven to 400°F. Toss the cauliflower florets with the extra-virgin olive oil, salt, and ground black pepper together, then spread onto a baking pan. Roast the cauliflower until tender, about 20 minutes.
    2. Step 2Preheat oven to 500°F. On a floured countertop, Roll out 1 recipe of Thin Crust Pizza Dough to a 12- by 16-inch rectangle, then place on a cornmeal-dusted baking pan. Top with cauliflower and breadcrumbs. Bake until golden and crispy, about 15 minutes. Transfer to a cutting board, cut, and serve.
