- 1 Tbsp. chopped fresh tarragon
- 1/3 cup olive oil
- 3 Tbsp. champagne vinegar
- 2 tsp. pure honey
- 1 1/2 tsp. Dijon mustard
- Kosher salt and freshly ground black pepper
- 3 heirloom tomatoes (about 12 oz. total), cut into wedges
- 3 peaches (about 1 lb. total), cut into wedges
- 1/2 cup thinly sliced sweet onion
- 1 (4-ounce) bag watercress
Directions
- Step 1Whisk together tarragon, oil, vinegar, honey, and mustard in a bowl. Season with salt and pepper. Add tomatoes, peaches, and onion and gently toss to combine; let stand 20 minutes.
