Ingredients
- 8 oz. crumbled goat cheese (about 1 cup), at room temperature
- 1/2 cup ricotta cheese
- 2 scallions, finely chopped
- 1/4 cup fresh flat-leaf parsley, chopped, plus more for serving
- 2 tsp. lemon zest
- 2 Tbsp. lemon juice
- Kosher salt and freshly ground black pepper
- Olive oil, for drizzling
- Grissini or breadsticks, for serving
Directions
- Step 1Process goat cheese and ricotta in a food processor until smooth, 1 to 2 minutes. Transfer to a bowl and fold in scallions, parsley, lemon zest, and lemon juice. Season with salt and pepper.
- Step 2Top with parsley and drizzle with oil before serving. Serve with grissini or breadsticks alongside.
