Sweet and typically mild, Cubanelle peppers (also sometimes called Cuban peppers) add a touch of green to this buttery dip, perfect for a low-country shrimp boil. This recipe originally appeared in the book Saltwater Table: Recipes from the Coastal South.

Ingredients
- 1 cup (2 sticks) unsalted butter
- 2 cloves garlic, finely chopped
- 1 shallot, finely chopped
- 1 Cubanelle pepper, finely chopped
- 1/2 tsp. ground coriander
- 1 tsp. fresh lemon juice
- Kosher salt
Directions
- Step 1Melt 1 stick butter in a small pot over medium heat. Add garlic, shallot, pepper, and coriander. Cook until pepper is soft, 1 to 2 minutes. Reduce heat to low and add lemon juice. Season with salt. Add remaining stick of butter; stir to combine. Remove from heat and keep warm.
