Butter Baked Salmon with Cast-Iron Hasselback Potatoes

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 tsp. lemon zest, plus 1 tablespoon lemon juice
  • 2 cloves garlic, chopped
  • Kosher salt and freshly ground black pepper
  • 4 (6-ounce) skin-on salmon fillets
  • Chopped flat-leaf parsley, for garnish
  • Cast-Iron Hasselback Potatoes, for serving, optional

Directions

    1. Step 1Preheat oven to 425°F. Place butter in an 8-by-8-inch baking dish and melt in oven, 5 to 6 minutes. Stir in lemon zest and juice, and garlic. Season with salt and pepper.
    2. Step 2Season salmon with salt and pepper and place, skin side down, on top of butter mixture. Bake until salmon is just cooked through, 7 to 9 minutes. 
    3. Step 3Garnish salmon with parsley and serve with Cast-Iron Hassleback Potatoes, if desired, or your favorite side dish.
