Tex-Mex Chicken Meatballs

Looking for an easy Tex-Mex meal? Try making these delicious ground chicken meatballs, which are packed with flavor from spices and mild Hatch chiles. You can make an excellent light taco salad-style dinner as we suggest here, or serve them as an appetizer with guacamole and/or salsa for dipping, or as a side dish for a larger Tex-Mex feast! Pair 'em with Pink Grapefruit Margaritas for a true celebration.

Ingredients
- Cooking spray
- 1 lb. ground chicken
- 1 large egg, beaten
- 1/4 cup plain breadcrumbs
- 1/3 cup chopped onion
- 1 1/2 tsp. chopped garlic
- 1 (4-ounce) can chopped Hatch chiles
- 1/2 tsp. chili powder
- 1/2 tsp. ground cumin
- Kosher salt and freshly ground pepper
- 1 head romaine lettuce, roughly chopped
- Guacamole, salsa, and grated cheese, for serving
Directions
- Step 1Preheat oven to 400°F. Coat a small sheet pan with cooking spray. Combine chicken, egg, breadcrumbs, onion, garlic, Hatch chiles, chili powder, and cumin in a bowl. Season with salt and pepper. Form mixture into 9 (about 2 ounces each) meatballs, and place on prepared pan. Lightly grease meatballs with cooking spray. Bake until cooked through, 18 to 20 minutes.
- Step 2 Serve meatballs on romaine topped with guacamole, salsa, and cheese.
