It may seem counterintuitive, but grilled watermelon is delicious. The caramelized sugars are nicely complemented by an herby infused salt and halloumi — a squeaky, salty cheese that resists melting, so it's practically made for grilling.

Ingredients
- 1/4 cup loosely packed fresh basil, plus more for garnish
- 1/4 cup kosher salt
- 2 cups (1-inch cubes) watermelon
- 1 (8-ounce) package Halloumi, cut into 1-inch cubes
- Freshly ground black pepper
Directions
- Step 1Preheat oven to 250°F. Process basil in a blender until finely chopped, 5 to 10 seconds. Add salt and blend until incorporated, stopping to scrape down sides as needed, about 15 seconds. Spread in an even layer on a small rimmed baking sheet. Bake until dry, 18 to 20 minutes. Cool completely. (Salt can be stored in an airtight container up to 3 months.)
- Step 2Heat grill to high. Thread watermelon and Halloumi on 10 (6-inch) skewers. Season watermelon with basil salt and everything with pepper. Grill, turning occasionally, just until grill marks appear, 2 to 3 minutes. Garnish with basil.
Tip: Avoid seasoning the cheese with the salt — it's salty enough!
