Squash Ribbon Salad with Sunflower Seeds

Ingredients
- 2 Tbsp. olive oil
- 4 tsp. champagne vinegar
- Kosher salt and freshly ground black pepper
- 1 medium yellow squash
- 1 medium zucchini
- 1 tsp. chopped fresh thyme
- 2 oz. Feta, crumbled (about 1/2 cup)
- 1/4 cup roasted salted sunflower seeds
- 1/2 tsp. red pepper flakes
Directions
- Step 1Whisk together oil and vinegar in a bowl. Season with salt and black pepper. Using a Y-shaped peeler or mandolin, thinly slice squash and zucchini into ribbons, stopping when you reach the seeds. Add ribbons, thyme, Feta, sunflower seeds, and red pepper flakes to dressing, and toss to combine. Serve immediately.
