Those who like cilantro love it, and if you're among the select, this herby dip is just for you. Fresh lime juice keeps it bright and sunflower seeds add a nutty depth for balance.

Ingredients
- 2 bunches cilantro, roughly chopped (about 4 cups)
- 1/3 cup salted roasted sunflower seeds
- 1/2 shallot, roughly chopped
- 1 small clove garlic
- 1/2 to 1 jalapeño, chopped
- 3 Tbsp. fresh lime juice
- 1 tsp. finely grated orange zest
- 1/2 cup olive oil
- Kosher salt and freshly ground black pepper
- Crackers, for serving
Directions
- Step 1 Place cilantro, sunflower seeds, shallot, garlic, and jalapeño in a food processor. Process until finely chopped, about 15 seconds. Add lime juice and orange zest and pulse to combine, 3 to 4 times. With the machine running slowly, add oil. Season with salt and pepper. Serve with crackers.
