Christmas Tree Deviled Eggs

Answer: These Christmas Tree Deviled Eggs, which use avocado (and a drop of green food coloring) to turn typical filling into a festive, yummy hors d'oeuvre fit for any holiday party!

Ingredients
- 12 hard-cooked eggs
- 2 ripe but firm avocados
- 1/4 cup mayonnaise
- 2 Tbsp. Dijon mustard
- 2 tsp. prepared horseradish
- 1 drop green food coloring
- Kosher salt and freshly ground black pepper
- 1 yellow bell pepper
- Smoked Paprika, for garnish
Directions
- Step 1Cut eggs in half and remove yolks. Puree yolks, avocado, mayonnaise, mustard, horseradish, in a food processor until smooth, 2 to 3 minutes. Add food coloring and pulse to combine. Season with salt and pepper.
- Step 2Transfer to a pipping bag fitted with a star-shaped tip. Pipe mixture back into egg whites creating Christmas tree shapes. Chill.
- Step 3Peel pepper then cut into wide strips, removing any pith and seeds. Cut out 24 star shapes using a small star-shaped plunger. Top trees with stars and lightly sprinkle with smoked paprika.
Tip: A fondant plunger works best for making the yellow pepper star toppers. If the pepper seems too thick, try shaving it down, a little at a time, until it's the right thickness for the plunger.
