Ingredients
- 2 Tbsp. white balsamic vinegar
- 2 Tbsp. olive oil
- 1 Tbsp. pure honey
- 1 small shallot, finely chopped
- Kosher salt and freshly ground black pepper
- 5 oz. baby spinach
- 1/3 cup Marcona almonds
- 2 oz. Manchego cheese, thinly sliced
- 1 cup blackberries
- 1/4 red onion, thinly sliced
Directions
- Step 1Whisk together vinegar, oil, honey, and shallot in a bowl. Season with salt and pepper. Add spinach, almonds, Manchego, blackberries, and onion and gently toss to combine.
