Creamy Coconut Coquitos Will Make You Forget All About Eggnog

If you've never had Coconut Coquito before, it's a Puerto Rican Christmas drink similar to eggnog (but with no eggs). It's a creamy and rich rum-based cocktail with warm and cozy spices that's best enjoyed at holiday parties and Christmas gatherings, or while you're sitting around the fireplace basking in the glow of your Christmas tree.

Ingredients

  • 2 (14-ounce) cans sweetened condensed milk
  • 2 (12-ounce) cans evaporated milk
  • 1 (15-ounce) can cream of coconut
  • 1 vanilla bean, halved and seeds scraped out
  • 2 tsp. ground cinnamon
  • 2 cinnamon sticks, plus more for serving
  • 1/4 tsp. freshly grated nutmeg
  • Pinch of kosher salt
  • 1 1/2 cups Puerto Rican rum

Directions

    1. Step 1Combine sweetened condensed milk, evaporated milk, cream of coconut, vanilla bean and scrapings, ground cinnamon, cinnamon sticks, nutmeg, and salt in a large pot. Bring to a simmer over medium-high heat. Remove from heat and let steep at least 30 minutes and up to 2 days. (Chill if steeping for longer than 30 minutes.)
    2. Step 2Discard solids. Stir in rum. Serve over ice garnished with cinnamon sticks.
