Maple Syrup Chai

This warm drink based on modern masala chai is loaded with spices, fresh ginger, black tea, and maple syrup to sweeten it all up! It will last in the fridge for up to a week so double the recipe and sip on it all week long.

Ingredients

  • 8 green cardamom pods, cracked and seeds reserved
  • 6 black peppercorns
  • 6 whole cloves
  • 2 cinnamon sticks, plus more for garnish
  • 2 whole star anise, plus more for garnish
  • 1 (1-inch) piece fresh ginger, peeled and thinly sliced
  • 4 black tea bags
  • 2 cups whole milk
  • 2 Tbsp. dark maple syrup, plus more to taste

Directions

    1. Step 1Combine cardamom pods and seeds, peppercorns, cloves, cinnamon sticks, star anise, ginger, and 4 cups water in a medium pot. Bring to a boil. Add tea bags then reduce heat and simmer 10 minutes. Stir in milk and maple syrup. Simmer 5 minutes. 
    2. Step 2Strain through a mesh strainer; discard solids. Serve garnished with cinnamon sticks and star anise, with maple syrup alongside.
