Ingredients

  • 3/4 lb. mixed wild mushrooms
  • 2 Tbsp. unsalted butter
  • 1/4 tsp. sea salt
  • 1/8 tsp. ground black pepper
  • 2 Tbsp. cornmeal
  • 1/2 recipe Thin Crust Pizza Dough
  • 8 oz. Taleggio cheese, sliced

Directions

    1. Step 1Heat oven to 500°F. Sprinkle cornmeal over pizza peel or 2 baking pans.
    2. Step 2Roughly chop mushrooms into 3/4-inch pieces. Melt the butter in a medium skillet over medium-high heat. Add mushrooms and cook, stirring occasionally, for 3 minutes. Add the salt and pepper, and cook for 1 more minute.
    3. Step 3Divide dough in half; shape into 2 balls. Roll dough on a floured surface using a floured rolling pin to 12-inch rounds and transfer to the prepared pans.
    4. Step 4Add mushrooms and bake until crust is golden brown, about 15 minutes. Add the cheese and return to the oven for 1 more minute. Serve hot.

Tip: If using a pizza stone, heat the stone in the oven an hour before baking on it.
