If you don’t like okra because you’ve only ever had it boiled until soft and, well, slimy, this recipe will certainly change your mind. Grilled okra is crisp and tender. Serve it with Coffee and Brown Sugar-Crusted Skirt Steak, pictured.

Ingredients

  • 3 lb. okra, trimmed
  • 4 large jalapeños, sliced crosswise 1/2 inch thick
  • 2 Tbsp. canola oil
  • Kosher salt and freshly ground black pepper

Directions

    1. Step 1Heat grill to medium-high.
    2. Step 2Thread okra and jalapeño crosswise onto 10 sets of parallel 12 inch skewers (using two skewers prevents the okra from spinning when turned). Brush with oil. Season with salt and pepper.
    3. Step 3Grill until bright green and tender, 2 to 3 minutes per side. Serve immediately.
