Ring in spring with this tart and easy to assemble minty strawberry cobbler.

Ingredients

  • 2 Tbsp. unsalted butter, cut into pieces, plus more for pan
  • 4 cups halved strawberries
  • 2 cups sliced rhubarb
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 3 Tbsp. Chopped fresh mint
  • 2 tsp. pure vanilla extract
  • 1/4 tsp. Kosher salt
  • Year-Round Cobbler Crust
  • Vanilla Ice Cream, for serving

Directions

    • Step 1Preheat oven to 425°F. Lightly butter an 8-by-8-inch baking pan.
    • Step 2Stir together butter, strawberries, rhubarb, sugar, flour, mint, vanilla, and salt in a bowl; transfer to prepared pan. Top with Year-Round Cobbler Crust.
    • Step 3Bake until crust is golden brown and mixture is bubbly, 40 to 45 minutes. Cool 10 minutes before serving.Serve with vanilla ice cream.
