Ingredients
- 2 Tbsp. unsalted butter, cut into pieces, plus more for pan
- 4 cups halved strawberries
- 2 cups sliced rhubarb
- 1/2 cup sugar
- 1/4 cup all-purpose flour
- 3 Tbsp. Chopped fresh mint
- 2 tsp. pure vanilla extract
- 1/4 tsp. Kosher salt
- Year-Round Cobbler Crust
- Vanilla Ice Cream, for serving
Directions
- Step 1Preheat oven to 425°F. Lightly butter an 8-by-8-inch baking pan.
- Step 2Stir together butter, strawberries, rhubarb, sugar, flour, mint, vanilla, and salt in a bowl; transfer to prepared pan. Top with Year-Round Cobbler Crust.
- Step 3Bake until crust is golden brown and mixture is bubbly, 40 to 45 minutes. Cool 10 minutes before serving.Serve with vanilla ice cream.
