A great pizza topper, this easy tomato sauce gets all it's big, bold flavor from roasting the tomatoes in the oven with onions, peppers, and seasonings.

Ingredients
- 2 1/2 lb. plum tomatoes, quartered
- 1 yellow onion, diced
- 1 green bell pepper, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1/2 cup extra-virgin olive oil
- 1 1/2 tsp. kosher salt
- 1/4 tsp. crushed red pepper
- 1/4 cup chopped fresh basil
- 2 tsp. fresh oregano
Directions
- Step 1Preheat oven to 375°F. In a 9- by 13-inch baking pan, toss together tomatoes, onion, bell peppers, oil, salt, and crushed red pepper. Roast for 1 hour. Remove pan from oven and fold basil and oregano into vegetables. Cook for 30 minutes more.
- Step 2In a food processor, blend vegetables until pureed. Use immediately, refrigerate for up to 2 weeks, or freeze.
