Sesame-Thyme Crackers with Whipped Feta Recipe

This easy appetizer tops store-bought cheese and crackers. Serve it with Tomato-Shallot Spread.

Ingredients

  • 1/4 cup extra-virgin olive oil, plus more for baking
  • 2 1/2 cups all-purpose flour, spooned and leveled, plus more for work surface
  • 1/2 cup whole wheat flour, spooned and leveled
  • 3 Tbsp. sesame seeds
  • 1 Tbsp. fresh thyme leaves
  • 2 tsp. Kosher salt
  • 1 Tbsp. Honey
  • Flaky sea salt, optional
  • Whipped Feta
  • Tomato-Shallot Spread

Directions

    1. Step 1Preheat oven to 425 degrees F. Lightly oil two baking sheets.
    2. Step 2Whisk together flours, sesame seeds, thyme, and salt in a bowl. Make a well in the center and add oil, honey, and 1 cup cold water. Stir with a wooden spoon until dough comes together. Turn out onto a lightly floured work surface and knead until dough is soft and supple, 4 to 6 minutes. Cover with plastic wrap and let rest, at room temperature, 30 minutes.
    3. Step 3Divide dough into 4 pieces. Roll 2 pieces, one at a time, on a lightly floured work surface into a roughly 16"-x-12" rectangle. Transfer to prepared baking sheets. Lightly brush dough with oil. Season with flaky sea salt, if desired.
    4. Step 4Bake, rotating sheets from front to back and top to bottom halfway through, until golden and bubbly, 8 to 12 minutes. Cool completely on baking sheets. Repeat with remaining dough.
    5. Step 5Serve whole or broken into pieces, with Whipped Feta and Tomato-Shallot Spread alongside.
