Ingredients
- 1/4 cup extra-virgin olive oil, plus more for baking
- 2 1/2 cups all-purpose flour, spooned and leveled, plus more for work surface
- 1/2 cup whole wheat flour, spooned and leveled
- 3 Tbsp. sesame seeds
- 1 Tbsp. fresh thyme leaves
- 2 tsp. Kosher salt
- 1 Tbsp. Honey
- Flaky sea salt, optional
- Whipped Feta
- Tomato-Shallot Spread
Directions
- Step 1Preheat oven to 425 degrees F. Lightly oil two baking sheets.
- Step 2Whisk together flours, sesame seeds, thyme, and salt in a bowl. Make a well in the center and add oil, honey, and 1 cup cold water. Stir with a wooden spoon until dough comes together. Turn out onto a lightly floured work surface and knead until dough is soft and supple, 4 to 6 minutes. Cover with plastic wrap and let rest, at room temperature, 30 minutes.
- Step 3Divide dough into 4 pieces. Roll 2 pieces, one at a time, on a lightly floured work surface into a roughly 16"-x-12" rectangle. Transfer to prepared baking sheets. Lightly brush dough with oil. Season with flaky sea salt, if desired.
- Step 4Bake, rotating sheets from front to back and top to bottom halfway through, until golden and bubbly, 8 to 12 minutes. Cool completely on baking sheets. Repeat with remaining dough.
- Step 5Serve whole or broken into pieces, with Whipped Feta and Tomato-Shallot Spread alongside.
