Ingredients

  • 6 Tbsp. unsalted butter
  • 1 sweet onion, chopped
  • 2 garlic cloves, chopped
  • 1/3 cup all-purpose flour
  • 6 cups chicken stock
  • 3/4 cup dry white wine
  • 2 Tbsp. chopped fresh flat-leaf parsley
  • 2 Tbsp. chopped fresh chives
  • 1 Tbsp. chopped fresh thyme
  • Kosher salt and freshly ground black pepper

Directions

    1. Step 1Melt butter in a large straight-sided skillet over medium-high heat. Add onion, and cook, stirring occasionally, until golden brown, 10 to 12 minutes. Add garlic, and cook 1 minute. Sprinkle flour over onion, and cook, whisking, until flour is golden brown, 1 minute.
    2. Step 2Slowly whisk in stock and wine. Cook, whisking often, until reduced to 3 cups or until gravy reaches desired thickness, 45 to 50 minutes.
    3. Step 3Strain through a fine mesh sieve; discard solids. Stir in parsley, chives, and thyme. Season with salt and pepper.
