Ingredients
- 1/3 cup mayonnaise
- 1 (4-ounce) jar diced pimentos, drained
- 2 canned chipotles in adobo, finely chopped
- 2 Scallions, Chopped
- 1/2 tsp. Worcestershire sauce
- 1/2 tsp. chili powder
- 1/2 tsp. ground cumin
- 12 oz. Monterey Jack cheese, coarsely grated (about 3 cups)
- 4 oz. queso fresco cheese, finely crumbled (about 1 cup)
- Kosher salt
- Freshly ground black pepper
Directions
- Step 1Stir together mayonnaise, pimentos, chipotles, scallions, Worcestershire, chili powder, and cumin in a bowl. Stir in cheeses until combined. Season with salt and pepper.
- Step 2Cover and chill at least 4 hours or up to 3 days.
