Old-Fashioned Jam Cake

Our Basic Vanilla Cake, sliced to create layers, is party perfect when spread with fresh peach preserves and sprinkled with confectioners' sugar. Recipe adapted with permission from Cakes From Scratch in Half the Time, by Linda West Eckhardt (Chronicle Books, 2005).

Ingredients
- Basic Vanilla Cake
- 1 cup peach preserves
- Confectioners' sugar, for dusting
Directions
- Step 1Heat the oven to 400°F. Make Basic Vanilla Cake.
- Step 2Cool cake in the pan on a wire rack, 5 minutes; then turn out onto the rack and cool completely.
- Step 3Split cake into two layers and spread peach preserves on the bottom layer. Top with the remaining layer. Dust with confectioners' sugar.
