Deep Chocolate Glaze
This simple glaze makes a basic cake into an ethereal treat.

The key to a glistening glaze is to pour while it's warm, guiding it with a spoon toward the cake's sides, where it can drip in slow motion. Use this rich glaze to ice our Basic Chocolate Cake or Basic Vanilla Cake. Recipe adapted with permission from Cakes From Scratch in Half the Time, by Linda West Eckhardt (Chronicle Books, 2005).

Ingredients
- 8 oz. bittersweet chocolate, finely chopped (1 1/3 cups)
- 4 Tbsp. cold unsalted butter
- 1 Tbsp. corn syrup
- 1 cup plus 2 tablespoons heavy cream
Directions
- Step 1Place chocolate, butter, and corn syrup in a medium heatproof bowl. Bring the cream to a boil and pour over chocolate. Gently whisk until smooth. Use immediately.
Timesaver: Make ahead and rewarm, before glazing, over a pan of simmering water.
