Broiling salmon is an easy, mostly hands-off oven method. A lemon-butter mixture keeps it flavorful and helps keep the fish from drying out.

Ingredients
- 4 Tbsp. (1/2 stick) unsalted butter, melted
- 1/2 tsp. lemon zest, plus 2 teaspoons lemon juice
- 1 tsp. red pepper flakes (optional)
- 4 (6-ounce) skin-on salmon fillets
- Kosher salt and freshly ground black pepper
- Bibb Salad, for serving, optional
Directions
- Step 1Heat oven to broil. Line a small, rimmed baking sheet with foil.
- Step 2Combine butter, lemon zest and juice, and red pepper flakes in a bowl. Season salmon with salt and black pepper. Place, skin side down, on prepared baking sheet. Spoon lemon-butter mixture over salmon. Broil until just cooked through, 4 to 7 minutes. Serve with Bibb Salad, if desired, or your favorite side dish.
